PDF conversion to GIF and text

That will be outside the scope for ImageMagick. If anything is going to allow this sort of thing it is ghostscript. Hmm have a look at the script "ps2ascii" that comes with ghostscript.
Also "pdftotext"

You may need to modify these scripts to output positioning info with the text.
