Image Colour Profiles

Hi

When converting from CMYK to RGB, how do you know which colour profile to use if the exif data doesn't contain any references to one?

I'm trying to convert the files found at http://public.me.com/craigfairhurst from EPS / PDF to JPEG.

If you notice I've used random colour profiles to generate those JPEG's and the differences in colours are quite extreme. The purpose of the JPEG is to allow accurate colour selection online for fabrics and the like, so having an accurate conversion is essential.
