Edge detection of mineral

Hi, I want to detect edges of 2.5x zoomed images of mudstone but i dont want to lose information about anisotropy of laminas. I was thinking of bilateral filtering to start with. But what later? How to detect those borders? Any advice would be greatly appreciated.
For every part of mineral there are 2 photos, one with normal and second with polarized light.
