IM is not a good program to do this as it will always load and save the image, thus for JPEG with its loosy compression, you will loss some image quality.
The better way is to use a program that removed the EXIF data but does not decode/reode the image data. one tool I know that does this and even preserves the EXIF parts you want is "jhead". However there are lots of other alturnatives.
